Beautiful and strong Le Beaufort

Beaufort is the cheese of our region. It is made from raw, whole, unpasteurized cow’s milk.

It has been produced for centuries using traditional methods.

Beaufort is a cheese with a thick, yellow to light-brown rind, enclosing an ivory-colored paste. It has a firm, supple texture, with small, regular holes. Its flavor is distinctive, with floral and fruity aromas, which evolve into more complex and powerful notes with aging.
